MY VIOLET-FLAVOURED KETO ICE CREAM


My husband and I go on a Keto diet from time to time. The most difficult part of the diet for both of us is to cut the sugar because we both have a sweet tooth. This Super Easy Keto Ice Cream is perfect for us! It is Keto-friendly, vegan, gluten-free, sugar and soy-free option and anyone can enjoy it without compromising on taste.

HOW TO MAKE VIOLET KETO ICE CREAM?

📋 INGREDIENTS IN MY KETO ICE CREAM


This ice cream can be prepared in any flavour and colour of your choice. My favourite way to make it is with a Violet essence. Violet-flavoured ice cream has been my favourite since my childhood.

Coconut Milk – In the recipe, we substitute regular milk with coconut milk, but it has to be full-fat coconut milk to be able to achieve a texture closest to regular ice cream.

Sugar Substitute – For Keto-friendly ice cream, replace sugar with Stevia or Xylitol. Follow the instructions on the packaging of the product because every sugar substitute corresponds differently to sugar.

Essence – For my favourite violet-flavoured ice cream, I use violet essence which I sourced on the internet. You can find other food flavouring there as well. If you are not that adventurous and like the ice cream plain, you can make vanilla ice cream with vanilla bean paste. For chocolate ice cream, add vanilla bean paste and two tablespoons of natural cocoa powder.

Food Colouring – For my violet ice cream, I use purple flavouring. For vanilla ice cream, you do not need any food colouring as the vanilla ice cream is white. If you are making chocolate ice cream, the chocolate will give a light brown colour to the ice cream. But you can make the colour more intense with food colouring.

WHAT SWEETENER TO USE?

There are two main sweeteners used in Keto Diet:

Xylitol is a low-glycemic and natural sugar alternative with less than 40% of the calories in sugar. It is absorbed more slowly than sugar in the human body, and it doesn’t have the same effect on insulin or blood sugar levels. The taste of Xylitol is similar to sugar and would be a better substitute for sugar in ice cream.

Stevia sugar replacement

Slivia, on the other hand, is a plant native to South America, used by the natives for centuries for sweetening their teas and for making medicines. The plant has undergone a lot of processing to become the crystals sold in the store today. Slivia is great for baking because of its natural liquorice flavour.

Mix Keto chocolate chips or good quality ground 85% cocoa chocolate with the ice cream to make the texture and taste of the ice cream more interesting.

📖 STEP-BY-STEP INSTRUCTIONS


This low-carb ice cream is extremely easy to make in only three simple steps:

Step 1: GATHER THE INGREDIENTS


Place the coconut milk, the sweetener, the salt and the flavouring essence of your choice in a large bowl.

Step 2: Make the ice cream with an ice cream maker


Whisk all ingredients together until the sweetener has dissolved. It is that easy! You can use a hand mixer or a stand mixer, or do it by hand.

Add the food colouring and the essence as soon as the ice cream mixture is homogenous. To make the violet ice cream, I use purple flavouring and violet essence. You can use your mixer to blend them into the mixture or do it by hand.

Transfer the ice cream mixture to the ice cream maker and follow the manufacturer’s instructions to make the ice cream.

Step 3: Add chocolate to YOUR ice cream


You can make your ice cream more exciting by adding chocolate to it. Cut a piece of the chocolate bar into fine bits or grated it into scrapes. Alternatively, you can use small chocolate chips. The chocolate must contain 85 or more per cent cocoa to be suitable for the Keto diet.

As soon as the ice cream mixture begins to freeze and soft ice cream starts forming in the ice cream maker, add the chocolate bits and stir to distribute them evenly into the ice cream. Continue working the ice cream mixture in your appliance a little longer until the ice cream is ready.

Step 4: Store the ice cream


Transfer the ready ice cream to an air-tight container and store it in the freezer.

HOW TO MAKE ICE CREAM WITHOUT AN ICE CREAM MAKER?

Do not worry if you don’t have an ice cream maker! You can make ice cream by hand. It’s just more labour-intense.

Mix the basic ingredients in a large bowl and whisk them by hand into a homogenous mixture. You can add essence and food colouring next and stir until they are absorbed into the ice cream mixture.

Transfer the ice cream mixture into a large shallow container or freeze-safe oven dish and place it in the freezer. Stir the mixture every 30 minutes until it turns solid.

You can add chocolate scrapes while the ice cream is still soft.

  • An ice cream maker or a freezer-safe large low dish

Ingredients
  

  • 2 cups full fat coconut milk canned
  • 1/3 cup xylitol sweetener or a sweetener of your choice
  • 1/8 tablespoon tablespoon salt
  • 1 1/2 teaspoons vanilla extract or vanilla bean paste
  • chocolate chips or ground chocolate (85% cocoa or more)
  • 10 drops food flavouring optional
  • food colouring optional

Instructions
 

  • Place coconut milk, sweetener, salt, the essence of your choice (if you are using any) and the vanilla extract in a large bowl. Whisk until the sweetener has dissolved. If you like to add colour to your ice cream, add the food colouring last and stir well to integrate it into the ice cream mixture.
  • Pour the mixture into an ice cream maker and follow the manufacturer's instructions to make the ice cream. Add Keto chocolate chips or ground chocolate (85% cocoa or more) to the ice cream when the mixture is close to freezing. When the ice cream is ready, transfer it to a container and store it in the freezer.

MAKE ICE CREAM WITHOUT AN ICE CREAM MAKER

  • If you do not own an ice cream maker, pour the ice cream mixture into a container and leave it inside your freezer. Stir the ice cream mixture every 30 minutes until it turns solid.
