HOW TO PRESERVE VEGETABLES

 

For those of you who want to learn how to preserve vegetables, I have a few instructions here. They come from the Balkans, a place with long traditions in canning. On the peninsula, people in the villages have busy summers. They work their gardens, grow vegetables and fruits and preserve them for winter consumption.

For more than a century, the most popular way of processing vegetables in the region has been the water bath method. It’s still used successfully today despite all the controversies about it.

Preserving vegetables is easy. However, there are a few important steps that you must follow:

First, it you need to sterilise the jars prior packing the vegetables and use new tops. The second one is to use healthy vegetables and wash them really well. You can pack vegetables raw or blanched.
