Shopska salad is one of the most iconic salads in Bulgaria cuisine, made with beautiful fresh juicy sweet tomatoes, crunchy cucumber, smoky roasted peppers and onions, and topped up with feta cheese.

- 2 large tomatoes peeled and cut into bite-sized cubes
- 1 cucumber peeled and cut into bite-sized cubes
- 1/2 red or yellow onion peeled and chopped
- 1 sweet pepper seeds removed and chopped
- 1 marinated olive
- 100 g feta cheese grated
- 1 small bunch of fresh parsley chopped
- 1/2 tablespoon red wine vinegar
- 1 tablespoon olive oil
- salt to taste
Wash, peel and cut the cucumber into bite-size cubes. Wash the tomatoes well and remove their green parts. You can also peel the tomatoes. Cut them into bite-size cubes.Slice the onion into thin half-moons, then cut them into 2-3 smaller pieces. Wash the tomatoes well and remove their green parts. Slice it into 1.5 cm strips, then cut the strips into smaller pieces. Wash the parsley, remove the thick stalks and chop it finely. Prepare the dressing with vinegar and extra Virgin olive oil in a small bowl. Add small splashes of oil into the vinegar to make it easier to blend with the vinegar.
Place the cubed vegetables into a large salad bowl. Pour the dressing over the vegetables and add salt to taste. Stir the salad with salad spoons to coat all vegetables with salad dressing.
Sprinkle the parsley on top and a generous amount of feta over the salad. Decorate the salad with one olive on top.
