Easy Valentine Waffles with Greek Yoghurt
Waffles are my guilty pleasure, and for me, this recipe is the best one I have tried. It makes the most delicious easy Greek-Style waffles, wonderfully crispy on the outside and light and soft on the inside.

2 cup plain flour 3 large eggs 400 ml Full-fat Greek yoghurt 1/4 cup olive oil 1 teaspoon vanilla essence 1 teaspoon baker's ammonia or baking powder 1 tablespoon sugar I use Demerera 1/2 teaspoon kosher salt
Beat the eggs with a hand mixer for a few seconds until foam forms on top. Add the sugar, salt and vanilla and whisk until dissolved.
Stir the baking powder with the flour and sieve the flour into the bowl with the eggs. Using a bread whisk, mix the flour with the eggs.
Add the yoghurt and olive oil next. Whisk the mixture with your mixer until a thick dough is formed.
Preheat your waffle pan and bake the waffles. One load of waffles cookes for about 5 minutes.
Serve the wafers with a variety of sweet and savoury toppings.
