Easy Valentine Waffles with Greek Yoghurt

Waffles are my guilty pleasure, and for me, this recipe is the best one I have tried. It makes the most delicious easy Greek-Style waffles, wonderfully crispy on the outside and light and soft on the inside.

Ingredients
  

  • 2 cup plain flour
  • 3 large eggs
  • 400 ml Full-fat Greek yoghurt
  • 1/4 cup olive oil
  • 1 teaspoon vanilla essence
  • 1 teaspoon baker's ammonia or baking powder
  • 1 tablespoon sugar I use Demerera
  • 1/2 teaspoon kosher salt

Instructions
 

  • Beat the eggs with a hand mixer for a few seconds until foam forms on top. Add the sugar, salt and vanilla and whisk until dissolved.
  • Stir the baking powder with the flour and sieve the flour into the bowl with the eggs. Using a bread whisk, mix the flour with the eggs.
  • Add the yoghurt and olive oil next. Whisk the mixture with your mixer until a thick dough is formed.
  • Preheat your waffle pan and bake the waffles. One load of waffles cookes for about 5 minutes.
  • Serve the wafers with a variety of sweet and savoury toppings.
