Turkish coffee, also known as Arabic coffee, refers to the method of preparing coffee, not the blend. It's made in a small copper or brass pot (Trk. cezve). The perfect Turkish coffee is thick, sweet, fragrant and a real treat.
To make one cup of coffee, add 1 coffee cup of water, 2 heaped teaspoons of finely ground coffee and 1/2 teaspoon of sugar to a small coffee pot. Do not stir. If you do not have a cezve, use a small aluminium pot.
Heat your hob on the lowest setting. Gas hobs are too hot, use an iron plate under the coffee pot to reduce the heat. Place the pot on the hob. Keep an eye on the coffee when it starts bubbling. Remove it from the heat as soon as the coffee forms foam and begins to rise in the pot.
Transfer the coffee into a coffee cup and serve with a glass of water, white cherry jam, baklava or Turkish delight.
