The Best Greek Karpouzi Salad

Best Greek Karpouzi (Watermelon) Salad is a contemporary salad with traditional Greek ingredients, refreshing and light with beautiful flavours. Sweet watermelon pairs perfectly with the slightly acidic tones of the cherry tomatoes, olives add saltiness, and mint brings freshness and a wonderful tang. Watermelon salad without feta is a great vegan option, but adding salty Greek feta makes the salad irresistible!

Ingredients
  

  • 1/2 watermelon (rind removed) cut into medium cubes
  • 10 cherry tomatoes halved
  • 1-2 spring onions sliced thinly
  • 10-12 Kalamata olives pits removed
  • 100 g Greek feta cheese grated
  • 1 tablespoon small fresh mint leaves

For the dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon freshly squeezed lemon
  • pinch of salt

Instructions
 

  • Remove the watermelon rind and large seeds, and cut the watermelon into bite-sized cubes. Cut the cherry tomatoes into halves or quarters if large. Remove pips from the olives and cut them into round chunks. Clean and slice spring onions thinly. Transfer all ingredients to a salad bowl.
  • Whisk all ingredients for the dressing in a bowl until well combined.
  • Drizzle the dressing over the salad, and stir carefully to avoid breaking the watermelon. Sprinkle fresh young leaves of mint and grate feta cheese on top.
